Quick Meals for Back to School Time


Did we ever mention how close Olinda and Kate really are? Yes, we work together, but we also have playdates, dinners, parties, and generally see and/or talk to each other every single day. Both families even lived together when Kate was moving to Austin and no one sustained major injuries!

Back in 2013, Olinda planned Kate's baby shower for her son Kyle and even made her these terrific Slow Cooker Freezer Meals for after the baby was born and she didn't feel like cooking. Yes, we are really and truly friends!

So when we say these meals are great, we have honestly tried them out and mean it.

You simply buy all of the ingredients with the handy, dandy shopping list. Then spend one hour in the kitchen prepping everything for all 8 meals into gallon sized freezer bags and you are done.

If you try out the recipes and really like them, we suggest making double batches so there is always something ready for dinner. The hardest part is remembering the day before to move the meal from the freezer to the fridge to defrost. Once you do that, you just take the meal out, pop into your slow cooker, and dinner is done.

On those crazy school days that involve coordinating soccer practice, music lessons, and mom or dad coming home late, these meals make it so much easier. Try them out soon!
